What to do with all the extras?

With a few too many

We decided to make:

Apricot Cobbler
  • 2 c fresh apricots with 1/2 c sugar
  • 1/4 c butter
  • 1/4 c sugar
  • 1 t baking powder
  • 1/4 c milk
  • 1 egg
  • 1 c flour
  • 1/4 t salt
Cream butter and sugar. Add egg. Sift flour with dry ingredients and add with milk to creamed mixture. Pour over fruit in baking dish. Bake at 350 until dough is brown.

and also this:

Zucchini Chocolate Cake
  • 1/2 c oil
  • 1 3/4 c sugar
  • 1 t vanilla
  • 2 1/2 c flour
  • 1 t baking soda
  • 1/2 t cinnamon
  • 1 cube butter or margarine
  • 2 eggs
  • 1/2 c sour milk (or sweet milk with 1/4 - 1/2 t lemon juice)
  • 4 T cocoa
  • 1/2 t baking powder
  • 1/4 - 1/2 t cloves
  • 2 c diced or shredded zucchini
  • chocolate chips
Cream oil, butter, and sugar. Add eggs, vanilla, and milk. Mix dry ingredients together. Add dry to creamed. Stir in 2 c diced or shredded zucchini. Pour in greased and floured cake pan. Sprinkle chocolate chips on top. Bake 40 min at 325. done when toothpick comes out clean.

What better way to trick people into eating vegetables and fruits than by sugaring them up?
